Here's something I tried over the weekend. I've run out of ideas of what to use to kill a sweettooth craving...did a little reading and tweaking and came up with this. Its delicious, and good for you.

What you'll need:

* 1 can light coconut milk
* 1/2 cup sweetener (I used splenda, the original recipe calls for honey)
* 1 tsp. cinnamon
* 1 tsp. nutmeg
* 1 tsp. ground cloves
* 1 tsp vanilla extract
* 1/2 cup raisins
* 2 cups cooked quinoa
* 1/4 cup light silken tofu
* 1 cup skim milk.
* 8 scoops vanilla protein powder

What to do:

Heat first seven ingredients in a large saucepan over medium-low heat. Stir in cooked quinoa (1 1/4 cup uncooked will expand to about 2 cups once cooked...to cook quinoa simply boil it with 1 part quinoa to 2 parts water for 15-20 minutes over medium heat until it is soft and appears translucent).

Combine tofu, protein and milk in a blender or food processor until smooth. Stir it into the previous mixture.. Continue cooking over medium-low heat until mixture thickens and becomes the consistency of rice pudding. Serve at room temp.

Makes 8 servings @ 193 calories, 4 g fat, 1 mg cholesterol, 38 g carbohydrate, 2 g fiber, 30 g protein, 3% Vitamin A, 1% Vitamin C, 10% calcium, 15% iron

I like to use the sugar free jello pudding, skim milk, and like 3 scoops whey....


so many good recipes out there...

yea its good stuff...i just had a serveing as my post training meal.

I made something similar before and was actually thinking about it earlier at the store. I couldn't find the sugar free/fat free Jello pudding they usually have there though. I have a few flavors of it left so I may whip some up tonight. If i do, I'll post about it.

I poked around the kitchen last night and have banana cream and also cheesecake flavor instant fat/sugar free puddings. I also have a vanilla GNC tub that's a copy of ON Pro Complex.

I didn't really wanna open that one yet, but my current tub is Isobolic proteinoatmeal cinnamon flavor. I'm not sure how well that would go so I'll probably opt for the vanilla. I've done vanilla protein w/ pistachio before and that was really good, for anyone looking to experiment w/ flavors. I'll probably go ahead and make some tonight.
